Perfect Prime Rib Roast Pairing
Nothing is better than a bold red wine and Prime Rib Roast. Here is our recipe for the perfect roast at home every time.
- Select a (bone-in or not) prime rib roast with good fat marbling.
- Season well on all sides with salt and pepper.
- Pan-sear the roast on all sides. Choose a heavy-bottom pan, such as a cast iron skillet, and sear over medium to high heat for a brown, flavorful crust.
- Roast in a preheated oven at 225 degrees for 35 minutes per pound. Use a meat thermometer. Always put the probe at the thickest part of the meat, avoiding the bone and fat. It should reach 135 to 140 degrees.
- Rest the roast for 15 minutes.
- Pair the roast with a complex Syrah or Petite Sirah. LDV Winery wines are perfect for this recipe.
