Perfect Prime Rib Roast Pairing

Nothing is better than a bold red wine and Prime Rib Roast. Here is our recipe for the perfect roast at home every time.

  1. Select a (bone-in or not) prime rib roast with good fat marbling.
  2. Season well on all sides with salt and pepper.
  3. Pan-sear the roast on all sides. Choose a heavy-bottom pan, such as a cast iron skillet, and sear over medium to high heat for a brown, flavorful crust.
  4. Roast in a preheated oven at 225 degrees for 35 minutes per pound. Use a meat thermometer. Always put the probe at the thickest part of the meat, avoiding the bone and fat. It should reach 135 to 140 degrees.
  5. Rest the roast for 15 minutes. 
  6. Pair the roast with a complex Syrah or Petite Sirah. LDV Winery wines are perfect for this recipe.
